Greek Skillet

  1. First, heat olive oil in a large skillet. Then add the ground meat and brown. While browning, add salt, pepper, and oregano for flavoring.
  2. Once the meat is browned, add the garlic and heat until fragrant.
  3. Add water, better than bullion, rice, olives, sundried tomatoes, italian seasoning, parsley, and spinach (if using frozen).
  4. Bring to a boil and then set heat to low and simmer, covered, for around 20 minutes (or until the rice is fully cooked).
    • Check on the cook time partway through, and add a dash more water if necessary (start with around 1/4 cup).
  5. If using fresh spinach, add it about 1-2 min from the end of the rice's cook time to wilt appropriately.
  6. Remove from heat and stir. Add lemon juice and stir a bit more, just for fun.
  7. Plate and add feta cheese as a topping. Enjoy! :D
