Ingredients
- 1 cup long grain rice
- 2 cups water (or more, if the rice dries out while cooking)
- 1 heaping tablespoon Better than Bullion chicken
- Olive Oil (for browning the meat)
- 1 lb ground turkey
- Ground beef is fine too, but you should replace with an appropriate flavor of Better than Bullion too if you substitute.
- 3/4 cup kalamata olives, sliced (or more to taste)
- 1/2 cup sun-dried tomatoes, sliced (or more to taste)
- 1 large handful of spinach, frozen or fresh
- 1 1/2 tbsp lemon juice (but seriously, just eyeball it)
- 1 1/2 cups feta cheese, crumbled (or more to taste)
- 1 tablespoon garlic
- Salt
- Black Pepper
- Oregano
- Parsley
- Italian Seasoning
Instructions
- First, heat olive oil in a large skillet. Then add the ground meat and brown. While browning, add salt, pepper, and oregano for flavoring.
- Once the meat is browned, add the garlic and heat until fragrant.
- Add water, better than bullion, rice, olives, sundried tomatoes, italian seasoning, parsley, and spinach (if using frozen).
- Bring to a boil and then set heat to low and simmer, covered, for around 20 minutes (or until the rice is fully cooked).
- Check on the cook time partway through, and add a dash more water if necessary (start with around 1/4 cup).
- If using fresh spinach, add it about 1-2 min from the end of the rice's cook time to wilt appropriately.
- Remove from heat and stir. Add lemon juice and stir a bit more, just for fun.
- Plate and add feta cheese as a topping. Enjoy! :D
