Pork Chops with Mushrooms and Feta
The recipe that started it all. In the style of Valentina's Corner, except I'm not even gonna BOTHER linking to that terrible place because they TOOK DOWN THE BEST RECIPE EVER. Except of course that also the original recipe isn't that good--it's the custom version that is actually good.
Ingredients
- 1 lb pork chops, boneless
- 6 oz mushrooms, or more to taste
- 1/2 cup crumbled feta cheese
- 1/2 cup mozzerella cheese
- 2 tbsp butter (or so)
- 2 tbsp oil
- 1/2 onion (optional)
- Salt
- Ground cumin
- Ground pepper
- Garlic powder
Instructions
- Preheat oven to 365°
- Slice the mushrooms. If using onion, finely chop.
- Cut pork to about 3/4" thickness. Beat with a mallet or rolling pin until the thickness is 1/2"-1/4".
- Season the pork chops with salt, pepper, and cumin.
- In a preheated skillet, melt the butter.
- Add the mushrooms (and onion if using).
- Add salt, pepper, garlic powder, cumin, and any other seasonings you think of.
- Fry mushrooms until they release their juices and they look crispy on the edges. Or if using onion, until the onion is tender. Remove from pan and set aside.
- Add oil (as needed, you may need less if there's butter left over). Increase heat to high.
- Once the pan comes to temperature, add pork chops and sear on each side (about 3min each).
- Lower heat and cook for 5 more minutes on each side.
- Swap the oven to broil mode, if available.
- Transfer meat to a baking sheet.
- Add the crumbled feta cheese, then the mushroom/onion mixture, then top with mozzarella. The chops will be piled high with toppings. Do your best.
- Any additional cheese will cook to be a crunchy delicious snack, so it's no loss if extra cheese falls off. I recommend just adding any excess cheese to the baking sheet, anyways.
- Bake in the oven for 5-10 min, until mozzarella is completely melted and browned on top.
