Ingredients
- Pork Chops (2-4 chops)
- Typically, we cut them in half to make them thinner. You can also smack em a couple times to thin them out further.
- Aim for around 1/4"-1/2" thickness.
- Salt (enough to rub on each chop)
- Ground Cumin (enough to rub on each chop)
- Black Pepper (enough to rub on each chop)
- Garlic Powder (enough to rub on each chop)
- 1-2 tbsp olive oil (or substitute/mix with butter)
- 1 cup sliced mushrooms
- We commonly use canned mushrooms, but fresh are fine too.
- 1/2 cup feta cheese
- 1/2 cup mozzarella cheese
Instructions
- Season each pork chop with salt, pepper, cumin, and garlic powder on each side.
- Heat some of the olive oil in a small frying pan over medium heat.
- Add sliced mushrooms and toss until coated in oil.
- Add some salt, pepper, cumin, and garlic powder to taste.
- Saute mushrooms until they are browned on all sides.
- Remove from heat.
- In a larger pan, heat the remaining oil on medium-high heat.
- Sear the pork chops. (around 3 min on each side).
- Lower the heat to medium-low or low. Cook the pork chops for around another 5 minutes on each side until they are cooked through.
- Transfer pork chops to a baking sheet.
- Add the mushrooms and feta cheese, piling each pork chop high with toppings.
- Add mozzarella over top of the pork chops.
- Place the pork chops in the oven on Broil to melt the mozzarella cheese (5 min or so). Enjoy!
