One-Pot Couscous Sausage Skillet
In the style of iamhomesteader.com. Let's hope they're not fascists, but if so, what can you do. It's a good recipe
Ingredients
- Extra Virgin Olive Oil
- 1lb Italian Sausage
- We've been using precooked sausage from Costco, but you could use raw italian sausage and cook it in the first step.
- 1 onion (yellow, ideally)
- 1 teaspoon jarred garlic
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes, but you can be as generous as you want
- 1/2 teaspoon italian seasoning
- 1 cup couscous pasta (uncooked)
- 2 cups chicken broth
- We use chicken better than bullion
- 1 cup heavy whipping cream
- 1 cup parmesan cheese, grated
- 2 cups fresh spinach
Instructions
- Dice the onion.
- If using precooked sausage links, slice them into bite size pieces.
- To a large preheated steel pan, add the olive oil and italian sausage. If uncooked, cook until the meat is browned. If not, cook until the pieces have picked up some browning. a. You can also try cooking the onion first (swap 3 & 4). We've done it both ways and it always came out.
- Add the onion and cook for a few minutes until they're getting close to toasted. (3-5min)
- Add the garlic, salt, black pepper, red pepper flakes, and italian seasoning. Cook for 30s until the garlic is fragrant.
- Add the pasta, chicken broth, and heavy cream. Bring to a simmer, then reduce heat to low.
- Cook and don't forget to stir, since the couscous will stick to the bottom of the pan if it can, about 8-10 minutes.
- Roughly chop the spinach and if you forgot, this is a good time to grate the parmesan!
- Add the parmesan and spinach.
- Stir in the parmesan and spinach and cook 2-3 minutes, until spinach is sufficiently wilted.
- Serve!
