Greek Skillet

Adapted from Budget Bytes Greek Turkey and Rice Skillet, recipe here

Ingredients:

Directions:

  1. Cut sun-dried tomatoes into small pieces. If kalamata olives are not pre-sliced, slice them. If using fresh spinach, roughly chop.
  2. Heat a skillet with oil, then brown turkey or hamburger. Season with oregano, salt, and pepper while browning.
  3. Once browned, add rice, broth, kalamata olives, and sun-dried tomatoes. If using frozen spinach, add now. Add remaining seasonings.
  4. Bring to a boil, then put on low and simmer for 25 minutes. At about the halfway point, stir, and add water if needed (start with ¼ cup).
  5. After 25 minutes, test to confirm rice is tender. If using fresh spinach, add it, stir to combine, and cover and cook an additional 3-4 minutes.
  6. Serve! Top with feta and a splash of lemon juice.
