Greek Skillet
Adapted from Budget Bytes Greek Turkey and Rice Skillet, recipe here
Ingredients:
- 1 lb ground turkey or hamburger
- Garlic (we use pre-minced jarlic)
- ½ cup pitted and sliced kalamata olives
- ⅓ cup sun dried tomatoes
- Spinach, fresh or frozen
- 1 cup rice
- 2 ¼ cups broth (we use a heaping tablespoon of chicken Better than Bouillon and water)
- Oregano
- Parsley
- Italian seasoning
- Onion powder
- Garlic powder
- Salt
- Pepper
- Feta cheese
- Lemon juice
Directions:
- Cut sun-dried tomatoes into small pieces. If kalamata olives are not pre-sliced, slice them. If using fresh spinach, roughly chop.
- Heat a skillet with oil, then brown turkey or hamburger. Season with oregano, salt, and pepper while browning.
- Once browned, add rice, broth, kalamata olives, and sun-dried tomatoes. If using frozen spinach, add now. Add remaining seasonings.
- Bring to a boil, then put on low and simmer for 25 minutes. At about the halfway point, stir, and add water if needed (start with ¼ cup).
- After 25 minutes, test to confirm rice is tender. If using fresh spinach, add it, stir to combine, and cover and cook an additional 3-4 minutes.
- Serve! Top with feta and a splash of lemon juice.
